Good Things Really Do Come to Those Who Wait...

My lack of blogging has been well worth it.  I originally dove head first into work when I first got separated.  It was a way to clear my head and take my mind off everything that was going on.  I'm very thankful for my job and how much I love it.  I remember nights crying myself to sleep and thinking things could possibly never get better.  Then, my dad would tell me to get in the shower and go to work, as even though my ex took away our marriage, he would not take away a job I worked so hard for over the years.  My dad was right.  And going to work was the best thing I ever did.  My patients and coworkers took my mind off my personal life and made me laugh and smile each and every day.  Well, the hard work and dedication has paid off once again.  I just got a job promotion and couldn't be more excited to take on the next role!

In the meantime, I celebrated a little…

I said "goodbye" to my loyal Pathfinder...

And "hello" to my brand car...

I headed down south to Palm Beach, Florida…
and this was my beautiful scenery as I ran in the mornings...

…and of course we shopped lots and had some delicious meals and cocktails...

Pan Roasted Chicken

It finally feels like spring time around here and I sure hope it's sticking around.  
After going for a nice run on the trail yesterday, I came home to make this easy, yet healthy dinner.

Ingredients
6 Tbsp Olive Oil
2 lemons, 1 sliced, 1 juiced
4 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
3/4 pound green beans, washed and trimmed
8 small red potatoes, washed and quartered
chicken breasts

Directions
1.  Coat 9 X 13 pan with 1 Tbsp of olive oil.  Preheat oven to 450 degrees.
2.  Line pan with sliced lemon.
3.  Combine remaining olive oil in a large bowl with lemon juice, garlic, salt and pepper.
4.  Add green beans to mixture, and toss to coat.  Remove with tongs and place on top of lemon slices in pan.

 5.  Add potatoes to mixture and toss.  Remove with slotted spoon and place around edge of pan over green beans.

 6.  Add chicken to mixture, toss, and place on top of beans.  Top with remaining mixture.
7.  Bake for 50 minutes, or until potatoes tender (I placed in oven while preheating and still only took 50 minutes max).
